I'm worried that it will delete all the photos from my phone (even if they're backed up online / on the cloud).

The purpose of "Free up space" is to remove the local device copy of images which have been copied to the Google Photos cloud.  They will still be visible in your Google Photos app and at: https://photos.google.com/u/0/
 
I don't have a Samsung phone, but I expect that its camera app would look at the phone's local images so they after "Free up space" they will no longer be visible there.  This is not a problem, just use Google Photos as your ~Gallery~ and it will contain everything.
 
It is always a good idea to store important images in more than one place / tool.  My photos are in Google Photos, on my laptop, and on multiple external disk drives (not connected to any computer or network).

Good morning. Did you verify that your pictures were successfully backed up by checking the Google Photos website? If your pictures are not visible on the website, then they were never actually backed up to Google Photos in the first place. 

If your pictures were successfully backed up and are visible on the website, then they should be visible in the Google Photos app if you login with the same account. 

If none of your pictures are visible on the website, then obviously they won't be visible in the app either. If that's the situation, then what most likely happened is that you reset your phone before the pictures were finished uploading. That means they were never actually uploaded, so there's nothing that anybody here can do to help you get them back (because Google Photos never actually had them in the first place). 

My suggestion is that you check the Google Photos website first to see if your pictures are there. If they are there, then this means the problem is with the Google Photos app on your phone, which we can try to troubleshoot if that's the case.

Ever since I got my Samsung phone I've primarily used Samsung's Gallery app for organizing photos. I have thousands of images that are organized into multiple albums on it. For a long time I've been meaning to switch over to mainly using Google Photos but I haven't found a method of syncing my phone's natively made photo albums to it. All my photos back up and sync, but aren't organized into their respective albums through Google Photos. At this point there are too many photos to be able to go in and manually reorganize them all. Any help would be appreciated, whether it's through a first-party Google method or some third-party method. Thanks!

These albums are proprietary to the Samsung Gallery and because it are no device folders, the Google Photos app (or any other app) does not see them. 
But if you change to a new phone, they have no value anymore while the albums at Google are saved in your account without taking additional space and these will survive if you use the same account on your next phone (like going on with your Gmail and all contacts stored in your account). And such albums has a much broader importance because they can be created for sharing, they can be viewed on computer and TV and they can be downloaded for having copies on disc. 
 
So it was a wrong idea to spent your time for your current Samsung only. 
But Google is a bad teacher too, so you were not warned against that company and that is no joke. 
Hélas.
 
PS: I can't check, but I don't think that Samsung has a tric to convert their albums into device folders because then it also would become much more simple to convert these folders into webalbums at Google.

That's not possible, because the app just shows them like any gallery. 
But without any account under the small circle right-up, nothing will get copied into your private space at Google for having a backup in case your phone falls in the Niagara.
However: you seem to have copied all at original quality and then you always will run out of your free space at Google, so simply start paying for extending your limit to 100 GB - see one.google.com/storage
Else use the recover storage button on photos.google.com/settings to have your stuff compressed to high quality and to get your mail running again. But this will not solve your problem in future.

And I would advise to install Office Lens (= Microsoft Lens): that's a very comfortable app for scanning also (better then Google Photoscan). But it also can convert normal picturefiles into pdf's. 
Be aware that is abnormal, because everyone can view normal picturefiles, but no special formats.

Have you checked whether you are using the latest version of the app?

Storage never has been unlimited, but if backupped before June 1, files on Photos that were compressed to high quality were not counted (high quality is named storage saver quality now). 
Because at the same time you could and still can have years of Gmail and many fat files on Drive which always were counted towards your free limit of 15 GB. And if that limit was reached, all stopped working.  
 
PS: lower resolution is not either, but images over 16 MP are downsized to 16 MP and that is no low resolution at all - a normal computerscreen has 2 MP only and that also is the resolution of normal FHD-videos.

As mr. Unknown already stated: your app seems not updated because in the actual version (5.49) they don't talk about high quality anymore, but about storage saver quality. That's no different quality, but new uploads from June 1 up are counted now about 3x less fast then original quality. 
 
However: if you are on some old Pixel-type, you still may enjoy "uncounted high quality" - see quality at the bottom.

You can add a person through the following steps.
 
Tap to open the photo which contains unidentified faces & then slide up or tap the three dots .
If the app had failed to include some faces in that picture, then you will see a prompt "XX faces available to add".
 
Tap the edit icon at the extreme right edge. (An icon of a pencil ).
 
That will show identified faces in square boxes & their thumbnails at the bottom.
Tap on the + sign on each thumbnail. 
Then the app will show you all the identified faces till that time.
You can select the right one.
 
If not, tap the + sign at the top right corner of the screen.
That would create a new grouping altogether.
 
Once created, the app may take some time to bring all the related pictures to this new grouping.
Otherwise, you can go through the collection & add the photos to the newly created group, manually, through the same steps as described above.
 
PS. The edit feature may not be available in some regions. If you happen to be from that, then regretfully nothing can be done.

If you are still in the edit mode of the image, simply select Cancel rather than Save a copy to undo the edits.

It seems that Google Photos defaults to Save a copy now after making edits, so if you are looking at an edited image, there is not a restore function as it is a edited copy of the image with changes applied.

You may need to locate the original image (often the one next to it in the main photos view.)

On some previously edited images, I have been able to open them in Photos, select edit, and then select Revert.  But if you open an image, select edit, and don't see the Revert option, it is not available for that image.

You can't because in because the manufacturer of your smartphone has hided the screenshot folder into the DCIM-folder and that folder is synced as a whole (in the Photos-app this folder is wrongly named "Camera"). But you can hide screenshots by archiving them. 

Complaints should be send straight to Google via the feedback option under your profile.

This is interesting: what is the brand of your phone and what the brand of your tablet? 
Because I have the same problem on my Samsung A40 phone but not on my tablet (iPad). 
I have escalated this problem at Google, but I don't expect a good answer soon. 
But I don't understand your situation: if you shoot on phone merely, but want to edit on tablet because of its larger screen, these photos are in cloud only and not on your tablet. And then you should get the normal Save-button instead of Save copy button. 
I can't predict if the next app-update will solve this problem, but it is wise to complain via the feedback option in the app on your tablet about this problem, because then they also know about that system. 
So have some patience and keep in touch.
 
PS: at backup-off you get Save copy only.

I have a galaxy tablet that is synced with my phone. I like to edit on my tablet due to the size. I can always just delete the second photo I guess. When I set up the tablet and transferred everything the photos were doubled and I had to go through and delete them.

But what is the type of your phone? 
Also a Samsung? 
There has been no need for filetransfer because you simply could have restricted to log-in to the Google Photos app to see your phonepictures if correctly backupped at Google - that's no syncing, just viewing. 
And if you would have started to edit then, you just could have saved your edits without creating a copy with backup on to get the edit synced to Google. 
It is not quite clear to me if you have kept the local copies, but in fact you don't need them. 
 
PS: now you get a copy which should be retained and you can delete the unedited one: then it will get deleted from the tablet as well as from Google.
