If the item is not in your trash, it may be permanently deleted and cannot be recovered.
Steps to recover deleted photos from Trash are as follows:
  1. On your Android phone or tablet, open the Google Photos app .

  3. Click Restore

Welcome to the Google Photos Help Community.

To assist you better, could you please let me know if you've deleted the photos from your Camera roll? If yes, it looks like the photos and videos didn't backed up properly to your Google Photos account. Could you please check if you're able to see the photos and videos on web (photos.google.com)? If not, please check in Recently Deleted album as you can always recover the deleted pictures from your iOS Photos " Recently Deleted album" box.

If they are still missing, then unfortunately there isn't a way to retrieve them. Going forward, I'd suggest deleting the photos and the videos using the Google Photos Free up Space option to avoid any data loss as it is the best way to remove a backed-up video/image from your phone, leaving it in the cloud, and this will only delete the files which are backed up completely on Google Photos. To do so, please follow the steps from "Free up space on your phone" help center article. 

Also, try checking your backup status on your phone and check if you're able to see the photos and videos on web (photos.google.com) before you delete them on your phone:
  1. Open the Google Photos app on your mobile device .
  2. At the top left, touch the menu icon  > Assistant.
  3. Read the first card. If it says:
    • "Waiting for connection" or "Waiting for Wi-Fi": You need to either change your settings or connect to a Wi-Fi or mobile network. Touch the card to change your settings.
    • "Back up & sync is off": Touch "TURN ON" on the card to back up your device's photos and videos, including ones you capture in the future.
    • "A photo or video was skipped": A photo or video on your mobile device doesn't meet our upload requirements:
      • Photos can't exceed 75MB or 100 megapixels
      • Videos can't exceed 10GB
    • "Backing up photos" or "Backup complete": This means your photos and videos should be saved.
Just a heads up: Photos and videos that aren't backed up will have this cloud icon  or circular-arrow icon based on the version of Google Photos App on your phone.

I have seen people wanting to sort photos by size so they can delete them but that's not what I'm looking for. I am looking for a particular video which I happen to know is quite long so I thought a quick way to find it would be to sort by size, or video length and then it would be near the top.

I have a pixel phone so I have tons and tons of videos in my google photos so searching for "video" brings all of the videos which I now need to go through one by one to check to see if it's the one I'm looking for. If I could simply sort by length, or size, I would be able to find it in a few seconds.

Is there a way to do this? Such as type in the search bar "Video sort:length" or something like that?

That would be incredibly useful as I use google photos to store all of my photo and video content I would like to be able to easily find certain videos when I would like to.

No method known, but if you choose the searchoption Videos you can see the duration if the files so you only need to check a very long one. 

But without assigning to thematic albums, your tons always will stay unsearchable.

I have the same issue. It's not getting to the pictures that is the problem,...it's that 'Gallery pics'  shows the very recent pics taken but then as you scroll up,...the pics become ones that are older and no longer following the sequence of the pictures i've taken and are out of order.

It's on of those issues that is probably easier to understand visually or speak voice to voice with someone. Is there a number I can call for support?

Good morning from here. 
Hopefully my late night advise has helped you out.  
 
It is totally unclear to me why you have the Google Photos app on your iPhone, but even when not logged-in, the app simply shows what you have on your cameraroll like any additional gallery-app would do. So deleting in the Google-app has the same effect as deleting in the Apple-app. 
But the general rule in life always has been: delete a few inferior ones (which should be deleted anyhow) and then check if they also are deleted in another important app, like the Gallery on Samsungs. 
 
But you were logged-in (why?) and you also have switched-on backupping towards Google at original quality (why?) and then you always will run-out of your free limit of 15 GB for Photos + Gmail + Drive and thereby you received a warning mail.  Check on one.google.com/storage in Safari for your Google-account. 
 
The only fast action you can do now is pressing the Recover storage button on photos.google.com/settings in Safari (you need to log-in with your Gmail-account) and after a day the usage for Photos will have shrinked to a lower value because the pictures are compressed to high quality which saves a lot of storage space. 
 
Thereafter you should switch-off the backup in the Google Photos app via settings under your profile to prevent further uploads to Google. Your content at Google needs to stay there for safety until you have found a better way for backupping and using iCloud is the most simple way - but not for free either when you need more then 5 GB (Apple always has been pricy :-)

I think it *may* have something to do with the assistant automatically generating its own video after a day of you taking pics/videos (i.e. the automatically generated one you sometimes get). Because the video that is downloaded/uploaded to youtube seems to be that one (in my case anyway).

The only time a youtube upload worked for me, was when the google photo assistant DIDNT auto generate a video for that day...

When the video starts playing on the Google Photos website, look in the lower right corner for a square-like icon. This will maximize the video to make it play in full screen. 
 
Keep in mind, however, that playing low resolution videos in full-screen mode may result in blurriness or seemingly out of focus viewing. This is because the size of the video is small (which is also why Photos defaults to playing those videos at their standard size, to give you the clearest video even though it may be small).

An easy way to transfer pictures from Google Photos to your thumb drive is to select the pictures you want to download from the Google Photos website, then choose the Download option from the 3-dot menu icon in the upper right corner. This will create a zipped folder with the pictures you selected, and on most computers it should be saved to your Downloads folder. 
 
From there, you can simply cut & paste the zipped file to your thumb drive and extract the pictures. Or, if you prefer, you can extract the pictures to a temporary folder on your PC and then cut & paste the image files. Both methods will work.

For less than 10 or so images, it might be easiest to select individual images then "Download" from the 3 dot menu.  These will go to the default download location for your computer (usually Downloads folder on Windows 10).  Then Cut-and-paste them to the thumb drive.

For more than 10 or so, select multiple images or an album, then "Download" from the 3 dot menu.  These will go to the default download location for your computer as a zip file.  Unzip the images (by right clicking and "Extract all" on Windows 10) - you can change the target location during the extract process to the thumb drive or just  Cut-and-paste them to the thumb drive from wherever they end up.

Welcome to the Google Photos Help Community.

Just to let you know that the Device Folders that you see in the Google Photos "Menu" option shows all the albums from your gallery irrespective of the album being backed up to your Google Photos.

Incase if you don't want to backup any device folder to your Google Photos, You can turned off back & Sync for the device folder that you don't want to backup? Settings > Back up & Sync > Back up device folders > Choose folder that you don't want to back up.

You can choose the folder by tapping Back up device folders from the settings on Google Photos App and select the folder that you don't want to back up. Folder can include:
  • Photos/Videos that you've downloaded.
  • Screenshots that you've taken.
  • Photos/Videos saved by other apps.
If you're referring to the photos from the others app on iOS, unfortunately, there isn't any way to stop backing up from those third party apps.

Also, if you delete the completely backed up photos from the Google Photos, it will also get deleted from all the synced devices.

I've tried everything, restarts, taking out and putting back in the card, I've scoured every answer on multiple sites, and searched every storage, gallery, settings, and apps with cloud logos, absolutely nothing. Storage said there are no files on my SD card, and somewhere I saw some of my old pictures labeled as "thumbnail" and when I tried to click on them they were super blurry, and in another place I found all the folders, but they were all empty. Other things to note are that the garbage can is still full of thrown away pictures, and I still have the pictures I did not organize into folders. Please help me, I'm so stressed out I haven't eaten in days. If I lose all these pictures my life is over.

You can't be helped, sorry. 
if a video is backupped with original quality in the backup settings, its quality is not lowered. 
But you may not be able yet to play-it at full quality - Google needs time to make it suitable for your devices. 
 
PS: just tested by shooting a 3 minute FHD-testvideo which was uploaded to Google with maintaining its original quality (that took more then 10 minutes - even with good wifi). In the app it always can be viewed at its original quality, because you just play the original file - unless already removed from phone. But when viewed on photos.google.com in the Chrome-app or in the Chrome-browser on your computer, you are dependant on its processing at Google and that can take some time before the video can be played well.

Have you turned on the "Backup & sync" in Google Photos?
If yes, then once the status says "Backup complete", you can use the option to free up space.
 
Nevertheless, I suggest you also create another backup by copying the content on your phone to some external storage.
