Can you try to locate the screenshots through this route?
I suggest you install the "Files" app by Google & look for "Screenshots".
 
However, the folder may not become visible in Google Photos if that contains a zero byte size file.
You will have to look for that & delete it.

I have many photos where it tagged the wrong person but I'm unable to untag that person. Does anyone know the process to remove a tag of an individual that's not actually in the picture.

  • When you see a pencil to the right of "People" in the info of a photo, you can add it to the correct group.  However, this option is not available in all regions. 
  • You can always:
    1. Select one or more pics
    2. Tap 3-dots > Remove results

To stop sharing an album you'll need to disable the album share, then re-enable it and re-share to the people you still wish to share to. You'll find more detail on the Stop sharing an album, commenting, & other sharing settings help article. Note that if the person you're removing access from has already copied the photos to their library or downloaded them, they'll still have access to them, they just won't have access to your album anymore.

I seem to understand prior to realizing the photos were missing you visited the photos.google.com website and the photos were still there, right? I recommend that you look for your photos here, signing in with all your Google accounts if you have more than one:
  • photos.google.com
  • photos.google.com/archive
  • photos.google.com/trash
  • get.google.com/albumarchive
  • drive.google.com
  • other online photo or file storage services you use (e.g. Dropbox, OneDrive, iCloud, Verizon, Amazon)

Thanks you everyone that has invested their time to help me.

First and foremost, I have all my pictures back because they were still in my local Trash. Thats where backup and sync puts them when you delete files and folder.

2nd, I believe this all was caused by myself because I deleted pictures (whole folders) on my Google Drive 2 weeks ago (as can be seen in the activity log) Then last weekend I must have emptied the trash and deleted everything, I just cannot recall myself doing that, but knowing myself thats probably it.

I now have moved pictures from Drive to Photos and have no more "link" between them, this makes these accidental deletes between two services not possible anymore.

So, all is well in the end, Lesson learned.. Backups are important!

My google photos started backing up all my stuff on my phone again today, when it has already been backed up and safe for a long time. It was after I updates my Samsung s10e over night. I thought it was because photos was updating, but this morning its saying a new version is available? So why did it do this? 
I am worried that if I delete all my data from my phone in future, which I do once its on a hardrive, google photos may suddenly decide to not have my stuff stored again and go to back up but it won't all be there? Hope that makes sense.

Welcome to Google Photos Community Support Forum & thanks for your post.
 
When you delete a photo through your device, it will vanish from the cloud & all synced devices. That's the design feature of the Sync function.
 
Once you activate sync, you should never delete pics straightforwardly.
 
Sync means your photo library stays consistent across all devices you sign in to your account with Google Photos.
For example, deleting a photo from one device will delete it everywhere, and editing that on the web will edit it on the original device.
 
Now before proceeding to delete something, please go through these steps first.
  • Tap the library -> Photos on device -> View all. Ensure you do not see a cloud symbol on any folder unless you intentionally skip those from the backup.
  • Tap your profile icon & check whether you find a message "backup complete".
  • Next, visit the site https://photos.google.com & verify all the latest pics are visible there.
  • Additionally, create a local backup by copying the content to some external HDD or USB.
Once you are through all the steps above, you can delete the pics through the following steps ensuring to retain one on the cloud.
  • Use some file manager or gallery app to delete the photo. 
If not, you can delete it through the Google Photos app by following these steps.
  • Tap to open the pic either through the photos tab or on your Android phone through Library - Folder.
  • Tap the three dots at the top left corner or slide up.
  • Tap the option "Delete from device".
That will ensure your cloud copy remains intact.
