If you've deleted them from Google Photos and want to restore them, please know that photos/videos deleted from the Google Photos library, goes to the Trash for the next 60 days. So, in case, you deleted it by mistake you can always restore it from Trash folder within those 60 days (post deletion). But, if you don't find it in Trash, probably it must have been deleted more that 60 days ago. Unfortunately, restoring your lost/deleted photos and videos from Trash is the last resort.

The free up option removes the originals of backed up pics from the phone.
That creates space to capture new photos.
Restoring the backed up pictures would be defeating the whole purpose of the free up space exercise.
 
To bring back the pics to your phone's gallery either, you can download photos one by one.
Regrettably, there is no option to do so on a batch of photos.
 
Alternatively, you can install the Google One app. There is a one time option to restore up to two hundred most recent photos to the device.
However, that will not restore the local folder structure.
There is no requirement to join Google One. The option is available to everyone. 
However, the method may not be helpful to recover something when the count is more than two hundred.
 
Or, you can arrange for a bulk download by visiting the link https://takeout.google.com/.
Select the Google Photos app for data download.
Once the file is ready, you will get an email. Access that & unzip all the attachments into your phone's gallery.
 
That will bring everything to your phone.

If you took the picture in black & white using a camera filter or setting, there is nothing you can do to make that picture color. That kind of setting affects the original image file created by the camera. 
 
In the future, you can very easily apply a black & white filter to a regular color image using the editing options in the Google Photos app. The benefit with this method is the original version can be preserved and restored at any time, or it can left alone and a black & white copied version created alongside it.

If the pictures from your device are not visible when you visit the Google Photos website, that means they have not been uploaded to your account. 
 
Just because the pictures are visible in the app on your phone does not mean they have been uploaded. The Photos app behaves like any other gallery app, with the additional capability of uploading to, downloading from, and displaying images in your Google account. 
 
The only way to verify for certain if your pictures have been uploaded to your account is to check for them on the website. Make sure you are logged into the same Google account on both devices. If the pictures aren't there, check the Photos app on the phone to see the upload status.

To remove multiple pics from a face label, tap to open the collection & tap the three dots.
There you will find a prompt "Remove results". Tap on that.
Then, you can go on selecting multiple pics & remove those from the current face grouping.

However, you can lessen your efforts through these steps.
On the phone, long-press the first picture. Once a tick appears, slide down the finger while still in pressed condition. When you park your finger on the edge, the screen will keep on scrolling & selecting multiple pictures.
Once over, tap option remove results.
 
On a desktop, you can perform a similar action through the combination of Shift + click.
