I'm logged into my Gmail on my Huawei P30 Pro and all settings are switched on to sync with Google photos. Each photo I take on my phone is instantly mirrored on my Google photos and later backed up. Great!

My problem comes with deleting unwanted photos from my phone. When I delete them on my phone, the phone doesn't then mirror with Google photos in that the deleted photos still appear in Google which therefore means I will have to delete twice, once on my phone and then once again on Google photos.

Is there a way round this?  Surely the idea of back up and sync is that Google photos and the photos on my phone will be synced, both in terms of new photos taken and photos which have been deleted. 

Please help as it's driving me insane. I take loads of photos in daily life and the idea of having to delete on my phone and then again on Google photos is too much!

Google Photos stores photos by dividing them into folders. 

For example: For Instagram: Creates a folder named Instagram.
For example: For photos you take with your phone camera: Creates a folder called Camera.

And this is how it backs up your photos. If you want to exclude certain folders or all folders from backup, please follow these steps:

1-Tap Settings. This takes us to all of the Google Photos settings, including being able to change what is and isn't backed up on your device.

2-Tap Back Up & Sync, which opens up the fine-tuning details of Google Photos' backup options.

3-Here's where you control what backs up, when it can backup (WiFi vs. cellular), the quality of photos to backup, and a shortcut to purchasing more cloud storage space, if you need to change anything else while you're here.

4-Once you select that option, you'll see every folder on your device, alongside quick toggles to turn those backups an and off. Turning a backup off won't delete any photos, but it will stop new photos from going to the cloud; turning a folder on will automatically back up everything in that folder, however.

I understand you want certain of your photos not to be backed up. Google Photos stores photos by dividing them into folders.

I’m sorry, it’s not possible to recover videos or photos permanently deleted from the Google Photos Trash.   1. On your computer, open photos.google.com.
  2. Sign in to your Google Account.

Good afternoon. If you've uploaded an image file to Google Photos at a smaller resolution than the original, there is no way to reverse this. You would need to have the original file. 
 
Since you're talking about printing a picture, it's important to note a few things for future reference: 
 
If you upload your pictures in Original Quality, nothing is changed at all. If you upload in Storage Saver (formerly called High Quality), only those pictures larger than 16MP will be reduced to 16MP. For anything smaller than 16MP, Google Photos does not change the resolution. What actually happens is advanced compression of the file to conserve space, but this does not effect the resolution. 
 
You can learn more about the Google Photos upload options from the official Google Photos Help site
 
As for printing, you can print up to 24x16 inches with a 16MP image. Considering that the most commonly printed large sizes of photograph prints is 8x10, you can print a picture that size in full quality with a 4MP or 5MP file.
 
There's a great chart on fotoworkspro that lists how big of a printed picture you can get from various image file sizes.
 
Since most modern smartphones take photos that are at least 12MP, you shouldn't have any trouble at all printing full quality pictures unless your image file is super tiny, and that would have nothing to do with the Google Photos service anyway.
