Well I can assure you that the metadata is in intact. I have checked both raw (Sony arw) and jpeg files. Photo app displays an incorrect date but the file date in my files when viewing the card shows the correct date and time. I will try to show screenshots of each. As you should see, these two screens are of the same file name but the dates and times are totally different.  The screenshot at bottom is viewing the file in Google Photos.

The file you see in Photos is a worthless low resolution jpeg preview file embedded in the RAW-file. Apparently the Photos-app was not able to convert the original ARW-file into a high resolution JPG-file of 24 MP. That normally happens when storage saver quality is chosen in the backup settings of the app. 
Goodnight. So using the Photos-app for fast viewing maybe not a very good idea. 
 
PS: it is possible that your Sony-camera is not (yet) in the compatibility listing for RAW-files.

Ahh yes that's it. I wasn't thinking about file size limits, duh. Even if the original is jpeg the date is changed because of the size of the image. However, I wasn't uploading the file I was just using Google Photos to view the image. But apparently that doesn't matter. From now on I'll use Adobe Photoshop Express Mobile or some other to view the photos on the card. Thank you for your input.

Don't think you do understand the problem and that is caused by shooting in ARW or ARW+JPG (two files per image, one of about 24 MB and one of about 7 MB). 
 
RAW-files are meant to get professionally edited in expensive (Adobe) software on a desktop computer with a calibrated screen and then exported as high quality JPG-files for general purpose applications and uploading to Google Photos or another quality cloud. And the original large files are kept on disc only and quite likely they never will be used anymore - but you simply can't trash your originals like in the past you could not trash your negatives. 
 
So what you are doing with feeding your card straight into your phone is abnormal because it can't predicted what the available apps are going to do with these complex files. And as far as shown by you, the Google-app only picks-up the worthless embedded preview file (that is something different then the 24 MP JPG camera-version of the RAW-file - if available).

For testing purposes I kept one 24 MP Sony-ARW and one 24 MPJPG from the same scene and from earlier experiments, I knew that Google Photos had no problems with this type of RAW-file. 
I have copied both files into an empty folder within the DCIM-folder of my Samsung and the picture below shows the result for the ARW (about the same for the JPG): 
 
 
So the simple gallery  showed the date of copying and initially the same date was shown in the Photos-app also. But after a while (maybe a minute) the correct date in 2017 was shown. And after adding the photo to a testalbum within Google Photos the correct date also was shown on the site in the Chrome-app or browser. 
 
But this is not quite the same situation as viewing files on external memory via usb, so you have to test other "fileviewers" for their suitability yourself.

Open the images file without the SD card installed and there are only about 20 pictures. The 14 GB of stuff isn't even there. What the heck is wrong with my phone? There's no cache to delete and don't see any trashcan or anything. To be clear my SD card has the 14 GB of data, I've checked it on my laptop. Also, removed 2.9 GB of pictures off the SD card and it didn't change the 14 GB my phone says are on it.

What we see as duplicates have some differences in file format or metadata.
Additionally, if you have activated Raw + JPEG capture or bracketing in your phone app, that would create duplicates.
 
Regrettably, Google Photos doesn't provide any means to remove the apparent duplicates. You have to search those manually.
 
However, you will find some tips in the following article on how to avoid duplicate photos & how to remove those.

It sounds like the original version of the movie shows up in Google Photos app, even though the edited version has previewed. I also see your statement about the re-edit that you've tried in the app to fix this issue. 

In this situation, I'd suggest you try the below mentioned steps and see if that makes a difference:
  • Sign into the Google Photos app on a different device with the same Google account and check if the issue persists.
  • Check if you're able to view only the edited version of the movie, after making modifications to the original one at photos.google.com (web version).
In case, if the issue seems to exist only in the app, I'd recommend trying the below mentioned troubleshooting steps which may help resolve it:
  • Try clearing the cache and data of the Google Photos App: Settings > Apps > Photos > Storage > Clear Cache and then tap on Manage Space > Clear All Data.
  • Check if the Google Photos app is updated to the latest version. To check, visit Play Store and go to the Google Photos App page. If you see update button, try updating the app that may help resolve this issue.
  • If the Google Photos app is updated to latest version, uninstalling the update may help resolve the issue. Here's how: Go to device Settings > Apps or application manager > Photos app > tap on the menu icon (three vertical dots) on top right corner > Uninstall updates.
  • If that doesn't help, go to Settings > Apps > Photos App > Disable. Later you can tap on Enable (If you've an option to uninstall the Google App, please uninstall and reinstall the app.

The photos you uploaded through Pixel will continue to count as zero space even after 1st February 2022. 
Only future uploads will occupy the space.
Nevertheless, to estimate the total size of your collection, you can arrange a takeout & then count the number of zipped files.

So, if my wife gets a Google One subscription to expand her storage and include me into family sharing, size of my photos uploaded before Feb 2022 will count as zero. Is that correct?

Further, if I import images from other sources before Feb 2022 (like WhatsApp or harddisk) into Camera folder on Pixel which is backed up and synced, do those images count in unlimited storage?

Apologies for too many follow up questions, but I am really looking to upload, share and manage all our family photos with Google photos. So, need to understand how to make it work.

Only the photo uploads through Pixel will not count towards storage.
