How can I put my albums in alphabetical order ?

Question: How can I put my albums in alphabetical order ?



Just touch the words Recent etc. above the albums on the Library page. 
Unless you mean the folders straight under Pictures on device - these are sorted automatically on the most recent update. But folders are no albums and what is named "albums" in the Samsung gallery, are no albums, but folders. 
Real albums in Google Photos are stored at Google and will survive your phone and don't take additional storage in your account.

There are multiple ways to transfer your pics to a laptop.
Once you are backed up the pics to Google photo, you can download those through https://photos.google.com.
 
Alternatively, you can arrange for bulk download through Google takeout. https://takeout.google.com
 
 
Nevertheless, if you want to transfer using a USB cable, enable file transfer through the notification panel once connected.
Then the phone will become visible as a drive letter in the explorer.
Next, you can follow the usual copy-paste commands.

The ususal Windows-10 computer has a standard Photos-app and that has a nice Import-function right-up which also remembers the foregoing action. 
Create a folder Phone in the main Pictures-folder before, then you can choose that folder as your standard location. And decide about deleting the originals from phone or not (deleting means that your phonegallery will be empty afterwards - but not in Google Photos if backup was on). 
All further file organisation is up to you.

Since July Google removed the option to sync photos from Google Photos to your PC via Google Drive.
 
The only option you now have is to use a cloud app (possibly OneDrive if you have a Windows PC) to upload your phone camera photos to the web and sync them to your desktop.

The photos in locked folders remain on the device only. The Google Photos app provides access only but doesn't back up those to the cloud.
 
Now your reset action has wiped all the data.
Regretfully, there is no way to get the pics in the locked folder as there wasn't any backup.
