But to avoid accidental viewing the sensitive ones simply can be hided by archiving.
Else you may install the Google Files app which has a secure folder.

When backupped at Google, there is no reason to move - they just can be deleted to make space unless you want to keep the original files. That can be done via the Google Files app (deletions also).

Apart from the Camera-folder under Pictures on device on the Library-page, you may see some other folders and it is up-to-you if you include them in automatic backupping or manually and selective.
If the general setting is off, then the Camera-folder is not automatically backupped either.
But its contents always is shown on the Photos-page.
PS: "Camera" is wrong naming - it should have been DCIM, but that is too complicated for the folks :-)

Never tried, but I don't think you can connect your normal camera to your Pixel. Besides the DCIM-folder is reserves for internal affairs - then you should select the main Pictures-folder.
But that is not needed at all, assuming you have a computer. When you connect your camar with the computer and switch it on, you can open the filemanager. Then open photos.google.com and log-in with your Google-account and then choose Upload and search the sd-card of the camera to be able to select the right group of pictures. Then click Open and they will get uploaded to Google Photos and then make an album immediately to have them together. And then you also can add the relevant Pixel-photos to that album to be able to sort them in the right order for the movie.

Go to google photos then library then you will see an option PHOTOS ON MY DEVICE next to it "view all" please click on locate the folder you don't to back up and disable it's back up and sync.

Photos uploaded at high quality from pixel Will not count towards your Google account storage.
If you have uploaded photos at original quality it will count towards your storage even if it's before June 1 2021,
Google account storage is not just photos storage it can be of Google drive, Google photos , Gmail etc they all count in 15gb storage.

Had you backed up really happened?
Can you please verify that by visiting the link https://photos.google.com ?
Enter the link in any browser on your phone & then log into your Google account to view the photos backed up on Cloud.
If you do not find anything, then there are two possibilities.
Either, the items have moved to the bin.
The Bin icon
becomes visible through the library view in the phone app.
Tap on the icon & then restore everything visible there.
Or, your backup was incomplete, so nothing got uploaded to the cloud.
The Google Photos app acts like a portal viewer showing everything from our phone and also the content backed up to the cloud,
Then, that creates a impression of everything getting backed up perfectly.
However, we need to check the status of backup periodically and look for the messages on "Backup and Sync" menu.
Further, we have to ensure every folder on our device is included in the backup & none shows a cloud symbol with slash.
If nothing was backed up to the cloud in the first place, regretfully, there is no way to recover those pics through Google Photos.
