What you are observing is the design feature of Sync action.
 
Sync means that your photo library stays consistent across all devices that are signed in to your account with Google Photos.
 For example, deleting a photo from one device will delete it from everywhere, and editing a photo on the web will edit the photo on the original device.
 
Nevertheless, if you have not emptied the bi, you will find the pics there & can retrieve through that.

Every now and again Google will automatically create a movie for me without asking. For example, 'They grow up so fast'. In this theme it uses photos and videos of my kids with specialised music. 

Awesome! Now I want to create my own movie so I head to Google Photos on the android app or on the web, select the theme (They grow up so fast) and choose my kids, wait and presto my movie arrives. 

The problems are that:
  • the movie only includes photos - no video
  • it is much shorter than the automatic (unprompted) one
  • the music is different
  • overall, just a sad boring version

Question is, is it possible to create a movie with the effects and quality of the automatic versions Google sends to me without asking (using the photos app)?

PS. This goes for all themes. Furthermore, single photos that are sent to me from Google has effects I cannot find manually, such as Colour Pop (where the person is in colour and the background is black and white). Makes me think there are actual humans creating these automatic ones for me. Hmm...

I'm sorry, it's not possible to manually create themed videos or stylized photos using the same effects, filters, and themes Google Photos generates automatically (no humans are involved).

Some pictures are nowhere to be seen on either device. They were clicked. Saw them after clicking in gallery. 15 min later they are entirely missing from all devices with no back up whatsoever.

Free-up space only deletes from phone what is safe at Google, so normally you should see them on the Photos-page of the Photos-app. 
If not, then you maybe logged-in under the small circle right-up with another account then used in the backup settings. Open setting under that circle and then open backup to check that. 
Hopefully you will find them back - else it would be an unexplainable bug.

I also have a monitored school account that can not be used with google photos, however, it still shows up in the menu where you can switch between accounts. I read that you can remove an account for a specific app on an Android and want to know if there is anyway to do the same on an IOS device. Android is changing to be the same as iOS in as much you can no longer remove an account from the app as you once could. It's a case of you can use a specific account or not. Why doesn't simply not using that account in Googe Photos present a problem?

I'm sorry, but the photos can't be restored if the trash is emptied.

Don't see the photo or video?
If something isn't in your trash, it can't be restored. You won't be able to restore a photo if:
  • You moved it to trash more than 60 days ago
  • You moved it to trash, then emptied your trash
  • You permanently deleted it from your trash

Source:  See if you can restore deleted photos and videos

But there is maybe a small chance that you can recover the photos, you can try to use a recover deleted photos app.

When we add a pic to an album, we create a tag only. The original picture stays in the gallery.
 
If you want to delete a pic, please do so through the Photos tab. Then, that will remove the item from the corresponding all albums.

Apart from the problem to get more space at Google to prevent paying (which often is a wrong idea), you are fully right: the originals in the stream should have been gone also. Unless you have many look-alikes, because these were not in that album. 
Or you are checking on phone, because then you will see what still is on phone merely and that album is gone. 

But the basic question is: why do you ruïne your backup at Google or do you use Google for temporary sharing in original quality only?

Google is very good in saying nothing (like most too large companies), but because you are a paying customer now instead of using their free space only, you can contact one.google.com/support
Probably they don't know also. 
"Next Christmas" is my standard joke about their lazyness :-)
 
PS: your bin showed many "look-alikes" (many call that duplicates, but they are not) and that is a general mistake: only the best one(s) should be kept and the rest should be trashed immediately - at least at Google. But there is a nasty problem with the app-design: deleting on the web also delete your local files on phone or tablet, so they need to be copied to computer before doing that.

Thanks for fast feedback Grace, because that is very rare here. 
 
It always is wise to tell us the reasons for doing something special, because it would have been normal to remove some less suitable pictures from an album (like mr Unknown was guessing) before sharing that album and it is quite abnormal to trash them because some may be needed for other albums. 
 
At normal album creation you would have selected them carefully in the mainstream. Or you would have cleaned-up the mainstream before starting to create a new album (or albums). But apparently you have chosen to select a fresh bulk for a new album and then trash inferior items within that album. 
 
Therefore I was guessing that your were trying to free-up some space at Google - sorry. 
But at high quality you don't need to pay soon unless you have a lot on Drive and Gmail also. 
 
Then I only can guess that your Google-server is out of service for a while and that the originals in the stream will disappear before next Christmas :-) 
No Google here to tell the truth - just poor volunteers only.
