I'm so sorry to hear this! I have no doubt this is extremely frustrating for you.

Have you checked photos.google.com on the web to see if your photos have been backed up there? I'd also suggest checking the trash to see if they have been placed in there. If they have recently been deleted for some reason, they should stay in the trash for 60 days before being permanently removed.

I'm not sure what has happened here, but have you possibly tried a 3rd party app for recovering files on your phone? Not ideal, I know. But it may help in recovering them quickly.

However, once a user deletes something permanently despite a warning message or allows the content to time out in the bin, Google doesn't maintain any backup.

There is no way to get back the content through Google Photos.

Nevertheless, you may install to your Android device a deleted photo recovery app (be sure to not pick one that requires rooting) https://play.google.com/store/search?q=recover%20deleted%20photos&c=apps;

and run a scan for anything to recover.

I assume it's an issue with the Metadata or something, but is there a way I can fix this? I know in some programs there are "fix date" or "correct date taken" options, but I can't seem to find the same for Google photos, whether it's on Android or the web client.

Google Photos does extract the date/time from the EXIF data, and stores it in a database linked to your account. The date can be wrong for a few reasons:

There are no EXIF data (like in photos sent via Whatsapp). It then often uses the upload date.
DateTimeOrigonal is wrong, for example due to a wrong camera date.
Google reads the wrong date, or there is a glitch in the database at the back end.

On the web client(also on Android) you can select one or more photos, tap (or click) the 3-dots > Edit date & time. That will change the date/time in Google's database, not in the photo.

Probably you have a small corrupt video which blocks further uploading.

You can check at Recently uploaded on the Search page which was the date of the last one and then check in the Camera-folder on the Library-page if there is a more recent video which can't be played - just delete that file then.

Tap the edit icon at the bottom
Tap on the middle to make the frame selector visible.

In some accounts there is a pencil shown at the right of the People section in the info of a photo. If that is the case you can click on that pencil, and add a face to another group. On other accounts, for example in Europe where Face grouping was introduced later, that edit option is missing, and then I am afraid that there is nothing you can do to correct. A work around may be to create two albums and add the photos you want to these albums.

Head over to https://photos.google.com/quotamanagement This should give a clue on where the storage is being used. Large photos and videos >5MB are listed and can be reviewed by tapping on the thumbnail to open then select the (i)nfo icon to see more detail about the files.

See if you can work out where the problem is,

There is also a possibility that there are unsupported videos which have been stuck in the system and just popped up at https://photos.google.com/unsupportedvideos
