Hello Despoina,
Please try deleting the Google Photos app, restart the phone (Camera roll photos will be safe) then reinstall. Don't turn on Backup & sync at first to see if you get a normal view of you Camera roll photos.
Turn on Backup to see if it has made a difference, and if not pinch stroke the screen with two fingers to see the month view, select the whole month and use the option to Backup now. Photos already backed up will not be re uploaded.
One thing to look out for is large videos which might be overloading the app, if you have any of these it might be worth trying them individually.
Sorry to be so vague, but this is a relatively new issue for iOS and we do not know what the problem is.
If there is no change
- How many GB of photos do you have on the device/iCloud
- Have you recently migrated to this new phone
- What was the trigger for this behaviour Updated Google Photos or updated iOS

It seems that using sync saves a copy of the original photos losing all edits and all organization into albums. Is there any way to save a copy of my edited photos other than downloading the entire album whenever I make changes?

You seem to mix-up between downloading and uploading.
If you want to upload different folders: that can be done with Backup & Sync if these folders are within a mainfolder which can be included in the folderselection.
Then these folders will get synced to Google Drive, but on Google Photos you only will see a mix of originals and edited versions in the same library - not in separate albums anymore. These can be re-created, but that will be a lot of work.
So on Drive the organisation is okay, but on Photos not. But probably you are not interested in Drive at all, because you already have a hardware backup on external disc.
But if I say: don't use that app, but just upload the folders with edited pics manually to Photos one-by-one because then you are able to create albums immediately, then you probably will say: that's too much work also.
So that's why Google is not really good anymore since they have murdered Picasa.

I do think you have to be more clear about your editing:
On desktop: if the edits are stored into the same files, they will sync via B&S into Drive, but not into Photos.
But if the edits are stored in separate synced folder, they will sync to Drive and upload to Photos next to the original.
Online in Photos: these edits will not sync down to Drive and to desktop, even when saved as a copy.
Later changes in albums on Photos will not be seen in Drive and desktop at all, unless by downloading such an album manually to desktop in a noin-synced folder.

Recently (two days ago) back up and sync stopped syncing my post edited photos from my Windows 10 pc. Typically I upload from the camera into a file, post edit in Lightroom, simple add (-2) to the unique name of the original. Google back up and Sync automatically uploads both the original and edited version side by side to the cloud. UNTIL two days ago. Now I have the origianl picture and beside it the newly named picture but no edits. in this case, I only changed the new edit to black and white version. I have used this process for pictures since I installed backup and sync. I used a similar process since Picasa! I am not new to this. Please help. I have people waiting for their post edited pictures

Normally a change in the filename does not even result in a new copy on Photos unless other metadata is changed also, like less pixels due to some cropping. But a change to B&W is not even seen as a change.
But even apart from this: I don't think you are acting very wise and you should not compare with the past where you could have had a syncing connection between Picasa and Picasaweb, because B&S does not sync to Photos, but to Drive only.
So as soon you are going to import new import, you should set B&S in pausing and after you are ready with all editing (including typing captions), you can switch-on B&S again.
Of course you will not agree, but that is the stupid way B&S is designed. The old brains are not there anymore.
