I've noticed that one or two photo albums I have shared with someone else, has the following options on the sharing options window. The three dot radial next to the shared name gives the options of "Hide name and show email address instead" or "Removed person". Most other albums I have shared have the options of "Block Person" or "Remove Person". All are shared with other gmail accounts.

Any idea why there is a difference? Is it possible that the one with the "Hide name and show email address instead" option might indicate the person it's shared with might not have viewed the album yet? Or is there another reason. I can't find anything about this when doing a Google search

Do not worry if you have a new version of the Photos application.
This is a standard notification for all users, and such notifications from Google can come for different products, for example now you can receive a letter about Privacy Policy.
This means that Google wants to notify all new activities, and warn people that some old settings or applications will no longer work. If you have new settings, then everything is fine.
 Check it on the Google Play Store: open the Photos and see if you need to update it or not.

Google Photos never uploads the same picture multiple times.
What we see as duplicates have some differences in file format or metadata.
Additionally, if you have activated Raw + JPEG capture or bracketing in your phone app, that would create duplicates.
 
Regrettably, Google Photos doesn't provide any means to remove the apparent duplicates. You have to search those manually.
 
However, you will find some tips in the following article on how to avoid duplicate photos & how to remove those.

I took a couple of really special videos of my daughter the other evening, I'm thinking that they were in the process of being backed up to my Google photos drive but they had not fully finished processing yet. I think my phone storage was getting full, so I selected the option to remove backed up photos and videos from my phone, as I often do. Unfortunately, I wonder if this included these videos from my daughter that had not fully finished processing? I do not see them on the Google drive, nor can I access them from my phone, I'm able to see a small thumbnail version of them and when I click on one of the video files, it says "processing". Is there any way I can retrieve these videos? Or is there any chance they will eventually process and I can view them again? Seems like it's been going on for days. Thanks in advance.

There is no way to get back the content through Google Photos.

Actually, review the Recently deleted album is the iOS Photos app as an additional step - you might look at it before you start your clean-up (and be suspicious if many items are added to it).
 
If you decide to uninstall and reinstall the Google Photos app, make sure to confirm that the Backup and sync setting is turned off.

To unhide a person that you hid before, please follow these steps.
  • Tap the search icon at the bottom .
  • Tap view all to see the thumbnails of all the persons in people & pets.
  • Tap the three dots at the top right corner 
  • Tap on the menu "Hide & show". Please note this menu works like a toggle. If you tap once, the hidden faces become visible. If you tap a second time, then all hidden persons hide again.
  • Now you will see all the hidden persons with a symbol of eye & a slash across that. 
  • Tap on the eye once. Please note, the eye icon also acts as a toggle. Tap once, the person will be unhidden. Tap a second tome & then the eye will reappear hiding the person once again.
  • Once the eye symbol is gone, the thumbnail of the person will become visible again.

If you delete a picture from within the Google Photos app, it will appear in the Google Photos trash bin. But, it will also appear in the Google Drive trash bin. This is because Photos and Drive share your Google account storage. 
 
Files you delete from within Google Drive will not appear in the Photos trash bin. 
 
Any pictures in your Photos trash bin can be recovered by selecting them and choosing the Restore option. However, after 60 days a file will be permanently removed from the trash and you can no longer recover it. Also, if you manually empty the trash bin in either Google Photos or Google Drive you will no longer be able to recover those deleted pictures.

These files I am sharing are not tied to an album.  All settings are set to "original" quality.

The purpose for this feature... Ultimately, I have created an entirely disconnected Google account as a means of sharing a subset of my photos with Family.  Sharing has been the ideal way to "copy" photos from my account to the account I intend to share.  Albums are not sufficient for this, so I am avoiding them.  They don't offer the same view that makes Google Photos so great and are limited to a small number of files.  Partner Sharing is a no-go because I don't want them to see everything I have.  I really don't want to go through the whole upload process a 2nd time for something that seems so simple.  Thank you.
