I imported some videos captured on an iPhone XR into Google Photos via the high quality option.  They were recorded using the 1920 x 1080 resolution in the iPhone's settings, yet when viewed in Google Photos, they were supposedly 568 x 320 resolution. 

I have already deleted the original videos after they were backed up onto Google Photos, so I'm stuck with the 568 x 320 videos. Is there anything I can do?

Unfortunately there is not. Most likely what happened here was after videos are uploaded, it uploads them in a lower resolution then takes a little time to process the video before it's available in high quality. If the original is deleted before this processing is done, it remains at the low quality. Be sure to check the resolution before deleting the original in the future.

Enter the link https://photos.google.com in any browser available on your phone.
Next, log into your account & see whether the photos become visible I the correct date order through the browser.
