Not clear how you did manage that, but if deleted in the Google Photos app (why else did you ask here?), they should be in trash on the Library-page and can be recovered until you also did empty that trash and did neglect the warning about permanent loss. 
Good luck, but if not, I only can hope that you have some good prints as usual in the very past. 

PS: raw-files can cause special problems on Google Photos, so that maybe an additional complication. 
Maybe they are present at photos.google.com as compressed jpg-files. But even these will not be that bad and good enough for normal prints.

There is no unsubscribe option with Google Photos. That's available for free with every Google account
However, you can uninstall or disable the Google Photos app through the settings on your phone.

Please review the following and see whether there are any options you haven't yet checked. 

1. Check your online account - photos.google.com 
If your photos were successfully uploaded to your online Google Photos account they may be available there. Try visiting photos.google.com and searching for them. If you have more than one Google account, check all of them. 

2. Check the trash - photos.google.com/trash
Once you delete photos from your Google Photos account, they're moved to Trash for the next 60 days. If you deleted them by mistake you can always restore them from the Trash folder within those 60 days. Here's the link explaining how to recover them from Trash. If you have more than one Google account, check the trash for all of them.

If you accessed the Trash and manually sent the photos for permanent deletion, or if the 60 days expired, there is no way to recover them from Google Photos. 

3. Review other options
  • visit picasaweb.google.com and search for your photos. 
  • have you made any backups of the photos on your phone, camera, computer, or elsewhere?
  • there is a small chance that you can recover the photos using a recover deleted photos app.
  • you can contact the Google Drive support team to see if any deleted files may be recovered. Use the Google Drive contact form, click Missing or deleted files, select a contact option, and be sure to tell them you permanently deleted files in Google Drive.
  • If you ever shared the photos with anyone else, it's possible they may have a copy they could share back or send to you.

All of my photos that were taken during March, April and May of this year have disappeared from my Google photos. I've searched in trash, archive, etc and have tried signing out and in again along with other suggestions found in other posts.

Nothing has worked and I'm certain I didn't accidentally deleted them as there is quite a large volume of them and I know they were successfully uploaded as I had a partner account for most of that time and the other person was able to view them.

How come my pictures dates are not matching together anymore with the date google photo gives.  there are many dates in between and more you go back worse it is even over 3 month's inbetwen the proper date.

Attached there is an example in the 2 pictures!

Shows now Mai 3rd 2016, this was properly saved before it wasn't like that. 
More I go back,  bigger is the gap is, there are over 4 months in between. All the pictures are like that. The time line is completely wrong.

However: if you are talking about pictures received via social media, you can expect date problems because these low quality files have all original shooting data stripped. But if are pictures of your own camera, the dates should be correct or nearly correct if some timezone is missing. 

What you can do is not too difficult: 
  1. Choose Use without account under your profile. 
  2. Close the app and restart the phone. 
  3. Start the app when you have good wifi for at least an hour and log-in again with the correct account - also in its backupsettings. 
  4. Give the app the time to rebuilt its local database completely and that may take long. 
  5. Check your dates the next day.
