Hi! Since 2-3 days, suddenly Google Photos stopped working on my phone. It was completely froze and stood and the app crashed every time I opened it. 
I had already installed and reinstalled, restarted my phone a couple of times and even switched off my phone multiple times. I even tried using another account to see if the amount of photos I had was collapsing with my phone's memory, rebooted my phone a couple times, cleared cache and everything. It works perfectly well on my PC. I'm using iPhone 6 and I don't know to get rid of this. Please look into this!

Thanks for posting in the Google Photos Help Forum.

I understand how important the photos are for you and I'll try my best to help. It can be possible that the photos weren't uploaded successfully to Google Photos (cloud) and also make sure you're logged in to Google Photos with the same Google Account that you used during the backup. Photos/videos that are not synced or backed up, will still appear in Google Photos and will have this icon  (which means not synced/backed up) or some photos/videos will also show up with the two arrows in a circle mean backup is in progress.

Once the upload is complete there will be no icon on any photos/videos. Often, many of us misinterpret that they are all backed up because the photos/videos show up in Google Photos and we over see the icons on each photo/video. If the photos/videos weren't backed up they cannot be deleted from the Google Photos library nor Trash.

In case, you are uploading a large amount of data (photos/videos), please know that it might take 24-48 hours for the photos and videos to sync across all devices. Please ensure to have 'Backup & sync' enabled on the Google Photos settings while you're backing up your photos and videos. To check is the content is backed up, login in to photos.google.com to checked for your backed up photos and videos. 

However, if you're sure they were backed up, I recommend you looking for your video here:
If a photo/s is deleted from Google Photos, it would go to Trash/Bin for the next 60 days (after deletion). Unfortunately, if the photos aren't found in Trash or deleted from Trash, I'm afraid, you might not find them else where to recover them because Trash is the last resort to retrieve your lost/deleted photos.

Meanwhile, also try uninstalling and reinstalling the Google Photos app on your iOS device and login with the same Google Account to check if this sorts the issue.

Thinking the video may be corrupted - no idea why this would be the case but tried fixing the video using the MP4Fix app anyway. Worked but only managed to recover half the video.

Yes, below the date.
But what you are showing is a very absurd filename from some badly designed source like the Photoscan-app. 
A normal filename from a mobile camera would show the date and time merely. 
Like 20210428_173645.jpg for a Samsung or just basic like IMG_2345.jpg for an iPhone. 

In the Google Files-app you can change such bad names into decent ones for you. 
But again: Google Photos still can't sort on filenames in albums because their boss don't understand their importance for oldmodish guys like us :-)

Check your Google trash folder here - photos.google.com/trash
Once you delete photos from your Google Photos account, they're moved to Trash for the next 60 days. If you deleted them by mistake you can always restore them from the Trash folder within those 60 days. Here's the link explaining how to recover them from Trash. If you have more than one Google account, check the trash for all of them.

If you accessed the Trash and manually sent the photos for permanent deletion, or if the 60 days expired, there is no way to recover them from Google Photos app anymore.

If you've deleted them from Google Photos and want to restore them, please know that photos/videos deleted from the Google Photos library, goes to the Trash for the next 60 days. So, in case, you deleted it by mistake you can always restore it from Trash folder within those 60 days (post deletion). But, if you don't find it in Trash, probably it must have been deleted more that 60 days ago. Unfortunately, restoring your lost/deleted photos and videos from Trash is the last resort.

But I also can answer that your iPhone did become too old and probably has too less user space also. 
Some still are on iPhone 5.

My device went through with the system update for Android 11, or I maybe just don't know if that's what it's called, but when completed I went into my google photos backup and it's beginning to re-backup previous photos? Over ten thousand to be exact. Why? How? What could just be going on here? Are my photos going to be completely saved and safe? Are they okay now? Are my photos permanently placed? And not only with the system update's sake, but for as a whole having pictures in google photos is google photos going to be safe for them? If I want to permanently save items on my phone, and previously uploaded items in google photos, to another safe backup solution, what should I be doing? What do people usually do to keep all their photos? And how do I keep the full resolution too, or quality? I know this is a bit straying from the title question, but does it change anything about the photo if it backs up in high quality rather than original? I know if you want bigger prints the quality becomes fuzzy, but to the regular picture does any of the clarity of the picture or by composition become altered?
