Thanks for posting on the Google Photos Help Community.

I certainly understand the need for your photos. Please know that photos/videos deleted from the Google Photos library, goes to the Trash for the next 60 days. So, in case, you deleted it by mistake you can always restore it from Trash folder within those 60 days (post deletion). However, restoring your lost/deleted photos and videos from Trash is the last resort.I recommend checking the Trash folder of Google Photos.

Please follow the below steps to restore lost/deleted photos:

1. Go back to the Google Photos app.
2. At the top left, tap Menu, then Trash.
3. Touch and hold the photo or video you want to recover.
4. At the top right, tap Restore.

This action will put the photo or video back:

1. Onto your phone.
2. Into the "Photos" section of the app.
3. Into any albums it was in.

I also recommend you looking for your photos here:

• photos.google.com.
• photos.google.com/trash.
• picasaweb.google.com.
• drive.google.com (under Google Photos).

If a photo/s is deleted from Google Photos, it would go to Trash/Bin for the next 60 days. If the photos aren't found in Trash, I'm afraid, you might not find  else because Trash is the last resort to retrieve your lost/deleted photos.

I see you are trying to create a photobook using pictures you have stored in your Gmail. 

First question is, where are you creating the photobook? The simplest way to save your photos into one place would be to sync Gmail with Google Photos. Then you can create a photobook from the Google Photos app.

If you are using a third party, like Shutterfly, you will need to search your Gmail for jpeg files and pick them out individually, creating a file for your photos.

Yes, you can use Google One, Photos or Drive on your device if you would like to sync them again.

Turn back up and sync on.

1. Open the Google Photos app .
2. Sign in to your Google Account.
3. At the top, tap Menu .
4. Select Settings   Back up & sync.
5. Tap "Back up & sync" on or off.

From here you will be able to access all photos in the app via your device.

The safest way to delete from Google Photos is to delete the Google Photos app and delete the photos at https://photos.google.com/

The camera roll photos will not be affected.

 

If you need to reinstall the app do not enable Back up & sync.

You can pinch the screen with two fingers to change to month view, select a month then use the option to Save to device.

How long can you view them after you've gone offline. They don't disappear even if I switch off, go out of the app, etc. once they load while online, how long can I view them offline?

A recent part is kept in cache as tiny images for direct viewing when having no wife. 

If you don't want that (for strange reasons), you need to delete cache+data in the general app-setting, 

But then it will take a while before they come back after having wifi again. 

Not practical.

I've tried the various manual steps which work if there is an identifiable person in the photo but not if the algorithm doesn't identify a face.
